Low-carb researcher Cassandra Forsythe talks about her new book
I have great hope for the future of livin' la vida low-carb because there is a whole generation of young people who are championing this cause right now and will be for at least the next half century! That should get you very excited if you believe in the solid scientific foundation of the healthy low-carb lifestyle and I am privileged to be a part of something like this that is making such a positive difference in the lives of this generation and quite possibly many generations to come. My guest today on my podcast show is another one of these young people who is making waves for low-carb.
In Episode 154 of "The Livin' La Vida Low-Carb Show with Jimmy Moore," we get to hear from the enthusiastic and lovely Cassandra Forsythe, a research assistant to world-renowned low-carb researcher Dr. Jeff Volek at the University of Connecticut and the author of two books of her own--The New Rules Of Lifting For Women and her latest Women's Health Perfect Body Diet. Some have read Cassandra's new book and shared with me their concerns about how it promotes the use of low-fat products and a fiber-based substance called glucomannon for weight loss. So I wanted Cassandra to come on the show today to respond to these criticisms directly.

Jackie Eberstein answers YOUR questions about the Atkins diet
If you missed Part 1 of my podcast interview with Jackie Eberstein, then you really need to go back and take a listen. LLVLC On YouTube (Episode 43 & 44): Jimmy's Perfect Low-Carb Key Lime Cheesecake Recipe

After lots of trail and error, this cheesecake is perfect!
One of the best desserts for people on the low-carb lifestyle is a cheesecake. It's so easy to make this dessert low-carb because pretty much all you have to do is substitute the sugar for an alternative sweetener. Cream cheese is low-carb as are most of the other ingredients in a good recipe. In fact, I shared this no-bake cheesecake recipe a few months back and it was pretty good. But there's something about a baked cheesecake that is so delicious I just had to create one.
In Episode 43 and Episode 44 of "Livin' La Vida Low-Carb On YouTube," Christine and I show you step-by-step how we make this recipe in not just one but two videos. It took a while to get this to come out exactly like I wanted it, but this is pretty darn close to perfect. :) I hope you enjoy it!

Here's the recipe in its entirety in case you missed anything:
JIMMY MOORE'S PERFECT LOW-CARB KEY LIME CHEESECAKE
3 eggs whites
Pinch of cream of tartar
8 packets of True Lime
3/4 cup of heavy cream
1/2 cup erythritol
(or equivalent sweetener)
2 eight-oz. boxes cream cheese
2 large eggs
Dash of True Lemon
Dash of ground nutmeg
Dash of ground cinnamon
Preheat oven to 400 degrees.
In a large mixing bowl pour the egg whites, cream of tartar and True Lime in it and beat with a mixer for 3-4 minutes until beyond frothy and thick.
Add the heavy whipping cream and beat until thick again. Then add the erythritol or equivalent sweetener and whip into the mixture.
Take the softened cream cheese and slowly incorporate it into the mixture with a low setting on your mixer until this gets really thick. Add 2 whole eggs and mix together. Throw in a dash of True Lemon, a dash of nutmeg, and a dash of cinnamon and beat into cheesecake batter.
Carefully pour the cheesecake batter into a small non-stick pan sprayed with Pam and spread out evenly in the bottom of the pan. Place inside oven and bake for 25 minutes or until golden brown along the edges of the cheesecake.
Allow to cool 45-60 minutes before slicing and preferably 4 hours of refrigeration for maximum thickness. Place a dollop of whipped cream on top for a low-carb dessert made in heaven!
Serves 8. ENJOY!

Atkins in 2003 after a slip and fall accident on ice took him away from us, there has been an obvious personality void of a strong voice in support of the healthy Atkins controlled-carb nutritional approach. Charlie Hills has hit on something that so many people overlook when they begin a diet and weight loss plan like low-carb. They start it with every intention of losing the weight forever, but somewhere along the way they lose their enthusiasm, get their focus off eating healthy, and basically give in to the desires of their heart (or stomach, in this case!)--and GIVING UP ON THEIR WEIGHT LOSS ATTEMPT FOR GOOD! We're winding up this encouraging and inspiring "Week Of Weight Loss Wisdom" with our second to last podcast interview with yet another success story who has found great success livin' la vida low-carb. We've heard from a Zone dieter, a weight loss reality show dieter, and an Atkins dieter. Today we hear from someone who hasn't had to deal with a great obesity problem, but she has had a need for controlling a condition she has called polycystic ovarian syndrome (PCOS). The LLVLC Show #148: 'Workout' Weight Loss Success Micah McCain

During this special "Week Of Weight Loss Wisdom" on my podcast "The Livin' La Vida Low-Carb Show with Jimmy Moore," we're hearing some truly remarkable low-carb weight loss turnarounds from people just like you and me. On Monday, Sue Knorr told us all how The Zone Diet has been making a positive difference in her life for the past 12 years and counting. Today we have another guest who only recently learned about the power of the healthy low-carb lifestyle.

When this show first came out in 2006, I blogged about it as yet another program on national television to inspire others in their own weight loss efforts and it has flourished ever since! Micah McCain discusses how his weight shocked him out of nowhere when he saw some video footage of himself. This is a subject I've blogged about before and it's true--if you wanna see what others see when they look at you, then have someone take a video or photograph of you and there it will be. It's a stark reality that hit Micah right between the eyeballs and made him want to do what he had to do to get that weight off.
Dealing with obesity his entire life, Micah needed an incremental approach to shedding the pounds. His trainer and nutrition adviser started him out eating more vegetables and fruit and then began substituting some healthy options in place of some of the junk food he was eating. The slow change in Micah's diet then took a low-carb turn when the sugar was removed first followed by flour, dairy, starchy veggies and even some fruits (because they're too high in sugar!). WOW! Pretty soon, Micah was full-fledged livin' la vida low-carb and he hasn't looked back since!

This is a special week at "The Livin' La Vida Low-Carb Show with Jimmy Moore" because we will be presenting more than our typical two podcasts. LLVLC On YouTube (Episode 42): Create A Low-Carb Blog Or YouTube Videos
In Episode 42 of "Livin' La Vida Low-Carb On YouTube," Christine and I talk about why it is important for low-carbers to start their own blogs and/or YouTube videos in our society hellbent on erroneously portraying the healthy low-carb lifestyle as a dangerous "fad" diet that is gonna kill you. The reality is the government-recommended high-carb, low-fat diet is wreaking more havoc on the weight and health of average, everyday people who think that's the ONLY way to healthfully shed the pounds. We know better and it's high time we share our experiences with others so they can learn the truth about low-carb living. What better way than writing a blog or recording some YouTube videos, right?

When I decided to start writing about my experiences on the Atkins low-carb diet in April 2005, I had no idea if anybody would ever actually read what I had to say. That really didn't matter to me as much as having an outlet for simply sharing my experiences with others so they can see what was happening to me. As the readership began to grow and grow, I realized just how important being active in this new media really is in a society where blogs, podcasts, and YouTube videos are where people are getting their information. YOU can be a part of all of that, too, and it's so super simple to sign up for a FREE blog.
If you wanna see a comprehensive list of most of the low-carb blogs out there, then go to my "Livin' La Vida Low-Carb Links" blog and look down the right-hand side panel. There you will find more low-carb blogs than you could ever visit in a lifetime! But these are the trailblazers in my mind because they have chosen to put themselves out there for all the world to see their progress on the low-carb lifestyle. With a united front of low-carb bloggers, we can show that livin' la vida low-carb is indeed here to stay because of the enormous impact it has had on our lives. And that's what low-carb blogging is all about!

I've interviewed quite a few people over the past couple of years who are ardent supporters and believers in the principles of livin' la vida low-carb for helping people lose weight and radically restore their health in ways they never even imagined could happen. Researchers, doctors, patients, advocates, authors and so many more have talked to me about how low-carb living is making a positive impact on weight and health and each person has their own unique way of expressing it. But never have I encountered someone with quite the background, verbosity, and vivacity of one Dr. James E. Carlson.

In Episode 41 of "Livin' La Vida Low-Carb On YouTube," Christine and I finish up with our dos and don'ts of Induction series we started in Episode 38, Episode 39, and Episode 40 by giving some last minute tips and reminders summarizing all we've shared over the past few weeks. Then we give you some easy-to-follow Induction-friendly menu planning for people who aren't sure what they're supposed to be eating on this important starting phase of livin' la vida low-carb. This will get you started off right!

The main point you want to remember in your menu planning is to eat fat and protein at each meal and keep your carbs to a bare minimum primarily from non-starchy and green leafy vegetables. The LLVLC Show #144: Interview With Dr. Keith Berkowitz About Low-Carb And Hypoglycemia

Dr. Keith Berkowitz reveals his low-carb hypoglycemia theory
Last week I shared with you about a bewildering blood sugar issue happening with me right now. My blood sugars actually DROPPED after a meal rather than the typical rise and then gradual drop that happens in most people. This jogged my memory about a guest blog post I shared about a year ago about this very issue.
In Episode 144 of "The Livin' La Vida Low-Carb Show with Jimmy Moore," we hear from the man behind the hypoglycemia theory associated with long-term low-carb weight loss success stories named Dr. Keith Berkowitz from the Manhattan-based Center For Balanced Health. Dr. Berkowitz worked with the late great Dr. Robert C. Atkins and inherited many of his patients who lost significant amounts of weight. Now he's seeing those patients dealing with hypoglycemia and is implementing strategies for dealing with this.

Ever since I blogged about my crazy blood sugar issues, people have been wanting to know more about this perplexing phenomenon. Dr. Berkowitz has been mulling this observational theory about reactive hypoglycemia around in his mind for a while now and is actively seeking a researcher to look into this for the sake of those low-carb dieters who have lost a lot of weight and then it just stops. This is something so many of us can relate to in our low-carb lifestyle.
Dr. Berkowitz identifies what this condition is, why reactive hypoglycemia happens even when you eat low-carb, and what you can do to overcome this. This isn't just some quack theory because I'm living it right now. Practical, easy-to-implement strategies in response to hypoglycemia are shared by Dr. Berkowitz in today's podcast and I can personally attest that they WORK! Since I've added many of the suggestions he recommends people with this do, I have lost over 10 pounds in the first week. There seems to be so much pessimism about the low-carb lifestyle in the United States that it can sometimes make you wonder if anyone in the world actually understands the science behind this way of eating for weight and health management. Unfortunately, the "low-fat diet religion" continues to rule the church of nutrition with a vice-grip that absolutely refuses to let go. But there is hope happening right now within the country of Sweden on behalf of the high-fat, low-fat dietary approach.
In Episode 143 of "The Livin' La Vida Low-Carb Show with Jimmy Moore," we catch up with one of the leading voices on behalf of livin' la vida low-carb in Sweden named Per Wikholm. He is a molecular biologist who stays abreast of the latest happenings in the world of low-carb living in his home country and is a strong proponent of educating the people there about the benefits of the healthy low-carb lifestyle. There's so much positive happening over there right now with low-carb diets that it should encourage you that GREAT things are to come here in America soon, too!

You'll recall I interviewed Dr. Annika Dahlqvist from Sweden on my podcast show back in January 2008 when she was vindicated by the government there following a charge by two duh-duh-dietitians there who claimed she was harming her diabetic and obese patients by putting them on a low-carb diet. The ruling was that low-carb is "in accordance with science" and "well tried." In other words, livin' la vida low-carb is based on FACTS from the latest research studies and it WORKS in the patients who have tried it. AWESOME!
Per Wikholm gets us all up-to-date on the things that have happened in Sweden regarding the high-fat, low-carb diet, or what they call LCHF, including this 44-month study by Jörgen Vesti Nielsen comparing low-carb with low-fat diets for diabetics published in Nutrition & Metabolism, the reaction to this study from Dr. Dahlqvist, the revelation that the government leaders in charge of the new dietary guidelines are linked to the food industry (GASP--what a surprise! NOT!), and the real changes that are happening in the food purchasing habits of the Swedish people that reveal the LCHF message is sticking. You will be beaming with pride that this way of eating is not just surviving in Sweden, but thriving and on its way to producing BIG CHANGES in that country. If this can happen there, then I have all the confidence in the world we can make it happen in America as well!
